What better way to celebrate lighter, brighter days than with a chic spring cocktail?

There are many reasons to love this time of year – warmer weather, flowers in bloom, lambs skipping across meadows – but really, our favourite thing about spring is alfresco drinking.

Five favourite spring cocktails

From a cheeky G&T in the beer garden after work to long, lazy Sundays sipping mojitos on a sun terrace, as soon as the temperature hits 15 degrees we’re good to go. So to celebrate, we’ve pulled together five deliciously springy cocktails to help you welcome the season in style. Cheers!

Strawberry Coconut

–          6 shots vodka

–          Mini bottle of rosé or sparkling wine

–          12 strawberries

–          4 tsps agave

–          Coconut water

–          Chopped basil

–          Chopped mint

–          2 limes – one juiced, one for garnish

–          Ice

Muddle the strawberries in a bowl, then add the agave, basil and mint and mix well. Transfer to a larger jug, add the remaining ingredients and top with coconut water. To serve, pour into martini glasses and use a spoon to add the strawberry mix to each glass.

Dew Drop

–          2.5 shots Chardonnay

–          1 shot gin

–          1 shot grapefruit juice

–          1 shot simple syrup

Shake ingredients with ice and serve in vintage teacups.

Thyme and Elderflower Gimlet

–          2 shots gin

–          1.5 shots St Germain

–          1.5 shots fresh lime juice

–          1.5 shots thyme simple syrup (recipe below)

–          Fresh thyme for garnish

To make the thyme syrup

–          1 cup granulated sugar

–          1 cup water

–          6-8 sprigs fresh thyme

Combine sugar and water in a small saucepan and bring to a simmer, stirring until all the sugar is dissolved. Stir in thyme springs and remove from the heat. Cover and allow to cool. Store in the fridge.

Shake all the ingredients with ice and pour into a tumbler. Garnish with fresh thyme and serve!

Island Spritz

–          1 part coconut rum

–          1 part pineapple juice

–          ¾ part lemon juice

–          ¾ Aperol

–          ¼ simple syrup

–          Sparkling rosé

Shake over ice and serve with pineapple chunks on skewers.

Raspberry Mule

–          2 shots vodka

–          1 shot Chambord

–          ½ shot lime juice

–          Ginger beer

–          Lime

–          Mint

Combine the vodka, Chambord and lime juice in a glass over ice, then top with ginger beer and garnish with lime and mint. Stir with a straw and enjoy!
