Colourful, rich and full of Mediterranean flavour, Ratatouille is perfect warm-weather comfort food, as well as being something healthy that the whole family enjoy.

Here, mum and blogger Natasha shares her recipe for homemade Ratatouille with Chicken Goujons – a delicious and nutritious family meal.


“If your kids are fussy about vegetables, Ratatouille is a great way to disguise them, and it counts as 4 of their 5 a day.”

  • 1 aubergine
  • 1 onion
  • 1 red pepper
  • 2 courgettes
  • 1 tin of chopped tomatoes
  • 3 fresh tomatoes (ours were from Grandad’s garden)
  • 2 garlic cloves
  • Large handful of fresh basil
  • Salt & pepper to taste
  • Olive oil
  • A pinch of sugar


  1. Heat a couple of glugs of olive oil in a large sauce pan
  2. Chop the onion and garlic and fry for 5 minutes, or until soft
  3. Add the tin of chopped tomatoes, along with a pinch of sugar and your diced fresh tomatoes
  4. Tear in half of the basil and allow everything to simmer for 5 minutes
  5. Chop your red pepper, courgettes and aubergine into 1cm cubes and add in small batches
  6. Simmer for 20-30 minutes

To make the Chicken Goujons:

  • 1 chicken breast per person
  • 125g fine breadcrumbs
  • 50g corn flour
  • 3 free range eggs, beaten
  • 2 tbsp. olive oil
  • Salt & pepper to taste

  1. Pre-heat the oven to 190C/375F/gas mark 5
  2. Oil your baking tray
  3. Cut the chicken into strips
  4. Lay out three shallow bowls, one containing the breadcrumbs (mixed with a pinch of salt and pepper), one containing the corn flour, and one containing the beaten eggs
  5. Dip the chicken pieces into the corn flour, then into the beaten egg, and finally coat the chicken in breadcrumbs.
  6. Shake off any excess coating and lay the goujons on the baking tray, drizzling with oil before placing them into the oven
  7. Bake for 30-35 minutes, or until golden brown and cooked through.


“Serve your chicken goujons with your Ratatouille and add a sprig of fresh basil for decoration. Max was very amused by the ‘tree’ in his dinner!”
